A product change (downgrade) lets you switch from a fee-bearing card to a $0/year card within the same issuer family. Your account stays open, your credit history is preserved, and your credit limit remains the same. This is almost always better than cancelling.

Step-by-Step Process
Call the number on the back of your card
Tell the representative you would like to do a product change (or 'product conversion'). You cannot do this online with most issuers.
Request a specific no-fee card
Name the card you want to downgrade to. For example: 'I would like to product-change my Sapphire Preferred to a Freedom Unlimited.'
Confirm the details
Ask: Will my account number stay the same? Will my credit limit transfer? Will my points transfer? Will there be a hard inquiry? (The answer to the last question should always be no.)
